Fish Meatballs

Hi everyone
It's been a while, just wanted to post a recent photo of me!!
Me in Grottaferrata

Last weekend we went to Grottaferrata for a walk. The weather was quite nice and I hope we can also go to the beach soon. That way I can work on my tan (which I have also been working on in the park)...of course using SPF 50 (La Roche Posay all the way) ahahh.

I've been feeling quite nauseous lately, it's not fun. Since the doctor told me to eat lots of protein, I've been trying to force myself, but it's not easy. The other day I spent 20€ on a nice fish (a SPIGOLA to be exact, which is kind of like a small sea bass that can be found in the Mediterranean sea only...)

Spigola or Branzino

So, the other night I cooked the fish in the oven with some garlic, rosemary and hot pepper, and I almost barfed just from the smell from the oven. May I ask why is it called morning sickness if it was 7.30 pm and I'm 7 months pregnant?

Today, I was feeling much better due to a diet of crackers and soda, so I decided to make "fish patties" in the oven. FORGET CAPITAN HIGHLINER or CAPITAN FINDUS for that matter. CAPITAN MELI's Fish Fingers were awesome!!

Here's my recipie
  • 500 - 800 g white fish de-boned and already cooked (oven-baked or boiled)
  • 1 or 2 slices stale bread, re-animated in water
  • 1 egg
  • 200 g breadcrumbs
  • paprika and salt to taste
  • Olive Oil - 5 tablespoons

De-bone the fish and mash it up in a large bowl with a fork as you would a can of tuna. Crack an egg, mix everything together with your hands, add some salt to taste and paprika and a tablespoon or two of bread crumbs.

Meanwhile, cut up the bread into small tiny pieces and put it in a bowl with some water (1 or 2 tablespoons). Let it re-animate and wring it thouroughly.

In another bowl, mix the remaining breadcrumbs with 2 tablespoons olive oil and some more paprika (if you like things spicy). Make the fish patties with your hands and cover them with the breadcrumbs.  It may be kind of messy but it's worth it in the end.

In a non-stick oven pan, lightly oil the bottom with olive oil. Place the patties in the pan and put in a pre-heated oven at around 180 ° C or 375 °F for about 20 minutes, turning the patties halfway through.

Let me know what you think!!!
Ciao for now
